    Colebrook – Norbrook Farm Brewery is quickly taking shape at its prime location on the quaint Stillman Hill Road. State Representative Jay Case (R-Winsted) was invited by the farm brewery’s District Managers, Randy and John Auclair, to check-in on the progress of construction. While there is no beer flowing through the tap lines yet, the Auclairs are confident that there will be in the coming months.

    Colin Coan, Norbrook’s Brewmaster, provided detail on the product, “Our onsite pub will have 12 taps pouring many rotating styles throughout the seasons. We will also be focusing on beer for offsite accounts. Our emphasis will be on a Farmhouse style Saison (5.5%alc), which is complex yet very approachable with a slight soft sweet malt note balanced with a medium bitterness. We will also offer an IPA (6.5%alc), which is aggressively hopped and boasting large flavors. To ensure our product is unique to our geographic location, we’ve been in touch with Thrall Family Malt of Windsor, CT and multiple hop growers as our hop yards in Bakerville and Colebrook at the farm are being installed.”

    “This will attract a lot of people to the Northwest Corner,” said Rep. Case. “There is a growing trend of Connecticut micro-brews but this is much more than that. In addition to locally produce beer, there will be plenty of recreational activities for patrons to benefit from at the facility. Ultimately, it will help our other local businesses because there will be more people visiting our part of the state.”

    “We will have indoor and outdoor seating, as well as a loft for people to congregate and see how we make our beer. The outdoor views will feature our hops fields and surrounding scenery. There will be many activities for visitors to partake in, other than sipping on libations. There is going to be disc golf, walking and hiking trails that are great for cross country skiing and snow shoeing in the winter months, as well as other social events for people to get involved with,” said Randy Auclair.
